WHere is a simplified interpretation of a drink found on our latest menu. This is a batch premix which is loaded full of essence of a Christmas time, which makes it ideal for hosting a holiday party. Save the extra cordial to use in morning drinks, desserts, or for another batch of bikinis.
Bikini Recipe
Serves 10 people
For the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Cocktail (makes 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing
Directions
Making the Syrup: Put the listed items inside a pan, bring to a simmer, agitating until the sugar dissolves. After that, remove from the heat and leave to reach room temperature fully. Pour into a sealable bottle, cap it and refrigerate it chilled, it can be stored for up to four weeks.
For the Batch Mix: Combine the specified liquids into one large bottle, leave to sit for an hour, then filter it best through cheesecloth, so it's completely strained.
For serving: Pour 85ml from the cocktail base into your mixing glass filled with ice, gently stirring lightly for a minute to cool it down. Strain to a cold coupe glass or a similar vessel, top with a few cranberries and complete it by giving it a light spray of the essential oil over the top.
